Current ReSharper edition can be changed it in the 'ReSharper | Help | License Information' dialog.
Please note, that you need to use an edition correspondingly to the License Keys available on the License Server.

My evaluation period has ended for Resharper 8, however my team at Microsoft has a license server for C# edition. I'm unable to change to the C# edition to get the license from the server working correctly. I tried uninstall/reinstall, now I'm trying uninstall, reboot, reinstall. This is very very annoying to need to do just to change the edition...
